Description
We specialize in the artisan baking of traditional proziaki – Podkarpackie flatbreads baked according to an old recipe on a hot cast-iron griddle. Our mission is to cultivate our regional culinary heritage with the highest quality. We exclusively use flour from clean crops (free from artificial fertilizers and pesticides), and we serve our proziaki with garlic butter, wild garlic, and cornelian cherry jam sourced from local suppliers.
Our brand is a multiple-time laureate of the prestigious "Best Taste of the Region" award:
2024: Bakery and Confectionery Category (traditional proziaki)
2025: Bakery and Confectionery Category (oszczypoki – our signature oatmeal proziaki)
2025: Regional Beverages Category (porter-style kvass)
Beyond our baked goods, we offer our signature non-alcoholic beverages: traditional kvass based on roasted rye bread, live and unpasteurized kombucha that retains all its health-promoting properties, and traditional, naturally fermented vegetable kvass with a deep flavor and rich composition.
We feature a unique, eye-catching stand equipped with a traditional stove that creates an exceptional atmosphere. Here, you can witness the entire proziaki baking process live.
A note for the curious: The name proziaki derives from the word "proza," which in the old Podkarpackie dialect meant baking soda. It is exactly this key ingredient, used to leaven the dough, that gives these traditional buns their unique texture and historical name.
